🤩Healthy Biscuits🤩: I have never been very good at biscuits. Usually they resemble hockey pucks 🏒rather than a baked goodl. So I jumped at the chance to try my luck once again. This one was originally published by @nytcooking. I made some updates to the original recipe to it to decrease calories, sugars and saturated fats.
😋😋 This one could qualify as breakfast, snack, lunch or dinner. Take your pick.
The substitution of @libertecanada Skyr yoghurt in the biscuits adds lightness. I replaced the ricotta in the original recipe. And I added some wonderful tastes to the tomato cobbler filling too. What are baked tomatoes without shallots, vinegar and garlic? It is easy and total time is about 1 ½ hours from start to finish. I recommend serving them hot. 🍅🍅
Using multi-coloured tomatoes from @sobeys made it more fun. I like the shallots instead of onions as they add a bit more zip. Putting some vinegar in with the mix adds some tang as well.
Instead of buttermilk I used what I call Faux Buttermilk which is milk, vinegar and a bit of Skyr Yoghurt. Lower in calories and saturated fats and also who has that laying around the fridge? I included this mini recipe. 😋
