Using a Beaujolais wine and  crystallized ginger, this really packs some taste and wow factor on the plate. Thus recipe is easy and fairly quick with the exception of the pineapple decorations. ๐Ÿ๐Ÿ

I noticed a pineapple that was way past its prime so I cut it up only to find that the sugars were Wow. So I cut it up and made thin flower petals out of it and dried them in the oven at a low temperature for a few hours. Then decorated the centre of the flower with orange zest.

Still the plate seemed to lack something,  so I added some rock candy to the juice on the plate.  That added some jewelry to the plate. ๐Ÿ˜‹๐Ÿ˜‚

On October 27th 04:45 you passed away.๐Ÿ™ I was so lucky to be with you the night before.  Thank you for being there for me always.  We all miss you so much. I can't stop crying. Your funeral was beautiful though. So many friends, family and students were there to wish you love and  peace. The American Legion in St Peter played TAPS for you.  I was never prouder. The man, father, son, brother, husband, uncle, grandfather and greatgrandfather. ๐Ÿ™
I cannot count the times your wise , graceful and gentle counsel saved me and guided me.

The pie filling sweetened with monkfruit so it is #lowcarb.  It is aged one day with lots of Ceylon cinnamon,  mace, allspice, cloves and ginger.

This was the last thing that I made in my class last weekend at the @canadasbakingandsweetsshow. It was fascinating to see the raw gum paste how to transform it bit by bit into Rose petals and leaves. The texture and shaping is so interesting to do. There are many steps to get there with various precision tools. 
It is posed on top of my Pony Tail palm for fun. Blends in quite nicely. Enjoy.

Instagram post 2150953577430346531_2050690299 ๐Ÿ๐Ÿ‚This season inspires me. ๐Ÿ‚๐ŸWorking on my upcoming book, I made these "Bannock Reimagined" biscuits. Their origin is Scottish. They became a staple in mining camps in Canada and Alaska in the gold rush days. 
They are generally plain so I updated them using oat flour to make them gluten free. They are also vegan. Extra bonus. Typically they were fried in a skillet. These are cut with cookie cutters and baked instead.

To add some festive taste,  the glaze is birch syrup (you can substitute maple syrup or honey), cinnamon and cut cranberries.  Cook and reduce the glaze and you have an easy fast snack. So easy the children could help. They use butter but this could be substituted with coconut oil to make them vega.

Working with various colours of royal icing, we learned how to make sure the royal icing was smooth- no easy task.

We worked for four hours in stages on all these cookies with an Autumn theme. It is always so interesting learning new skills. 
It was so interesting to use the pen with fine edible ink to draw the "wet on wet" flower with drawing. Quite a revelation. ๐ŸŒบ๐Ÿฅ€๐ŸŒน

So many talented people in the class too.
I have a lot to practice and learn. ๐Ÿ˜‚๐Ÿ˜‚We learned some great techniques for making lines with the royal icing. Really a lesson in physics ๐Ÿค”
